CHEESY CHICKEN EGG OMLETTE


I made this few days ago when we were all very hungry and not in the mood of cooking breakfast. And that was a quick and yummy breakfast
We love the flavor of green chillies in omlette..It added to the taste when blended with cheese and oregano and chicken

INGREDIENTS


  1. Egg- 3
  2. Boneless chicken - 100gms
  3. Green chillies - 2 
  4. Milk - 2tbsp
  5. Shredded cheese - 2tbsp
  6. Oregano -1tsp
  7. Pepper - 1/2 tsp
  8. Salt - as needed
  9. Oil /butter - 2tbsp


HOW TO MAKE


  • Cut the chicken into small cubes and keep aside
  • Beat eggs along with milk,chopped greenchillies ,salt andkeep aside
  • Heat a pan add butter
  • Add chicken cubes ans saute adding some salt and even a pinch of turmeric powder 
  • When all the water oozes out and chicken cubes are cooked well, spread the chicken pieces evenly and add the egg mixture into the pan
  • Sprinkle oregano and pepper
  • Cover and cook for five minutes.no need to flip the omlette 
  • Once the top is cooked spread the grated cheese on top and cover and cook for about 2minutes just to melt the cheese
  • Switch off the flame and move to serving plate carefully

CREAMY SAUSAGE PASTA



Merry Christmas dear folks...hope you all had a wonderful Christmas this year...For me n my little one,school closed and its vacation time.We both had great baking plans for Christmas, but unfortunately we all three were sick since last week. So today when we felt better my daughter asked for a pasta and cake, but my husband wanted a vegetable omlette.I made this pasta from scratch,with whatever was available. Same with the cake as we couldn't go out for any shopping.




So for today's breakfast i made vegetable omlette and creamy sausage pasta.Since i was in a hurry in the morning couldn't take pictures of omlette.will soon make that again and post it.
Nevertheless to say this pasta was deliiiicious,as you see in this picture. Now to the recipe

INGREDIENTS


  1. Pasta -1 cup
  2. Butter-2tbsp
  3. Maida-1tbsp
  4. Red chilli powder  -1tsp
  5. Milk-1cup
  6. Mozarella cheese-2tbsp
  7. Cheddar cheese -2tbsp
  8. Oregano-as required
  9. Pepper-as required
  10. Sausage- 3 or 4 chopped into circles or semicircles 
  11. Salt - to taste
  12. Olive oil-1/2 tbsp
  13. Garlic - 4 pods
  14. Onion - 1 medium size cubed
  15. Capsicum -1 medium size cut into slices


HOW TO MAKE


  • In a vessel cook pasta with enough water and once cooked drain the pasta and keep aside
  • In a pan add little oil and saute the sausage  and keep it aside
  • In the same pan add olive oil and add chopped garlic and cubed onion and saute in high flame for a minute
  • Immediately add sliced capsicum and saute well for 3 minutes in high flame.
  • Switch off the flame and keep the sauted vegetables aside.
  • In a nonstick pan add butter
  • Once the butter melts add maida and stir well continuously
  • Add red chilli powder and stir
  • Now slowly add milk little by little and mix taking care no lumps are formed
  • Now add the shredded mozzarella and cheddar cheese and mix well
  • Once the cheese melts and becomes a creamy mixture add salt pepper and oregano seasoning and mix
  • Now add the drained pasta and mix
  • Add the sauted sausage and the onion capsicum into this
  • Mix everything well.
  • Serve hot in a plate and season with oregano or pepper if required

GROUNDNUT CHUTNEY


This groundnut chutney is a wonderful side dish for idly or dosa.lt needs very few ingredients and less time to make.This chutney is not only yummy but very healthy also since we are adding lot of groundnuts/peanuts in to it.

I was introduced to this delicious chutney by my friend D.She is a wonderful cook.i have felt she has magic in her hands.Anything she prepares is sooo delicious may it be fried rice or biriyani and the list is endless.And her idlys are sooooo soft and fluffy that we all call her "idly"and totally forgotten her actual name.She is a wonderful human being too..Lucky to have some amazing people in my life:))))))...


I got the recipe from her and tried it which came out really well.Thanks a ton D...Now to the recipe...


INGREDIENTS


  1. Groundnut/peanut -1/2 cup
  2. Coconut  - 2 tbsp
  3. Dry red chillies - 2 or 3 soaked
  4. Shallot - 1 small
  5. Tamarind - 1 small piece


TO TEMPER

  1. oil - 1tsp
  2. Mustard - 1tsp
  3. Dry red chilli - 1 or 2
  4. Curry leaf - 1 spring


HOW TO MAKE



  • dry roast the groundnuts till golden brown
  • Once it cools down peel the skin and grind it along with all the ingredients to a fine paste by adding little water
  • To temper ,heat oil in a pan ,splutter mustards
  • Add dry red chillies and curryleaves
  • Switch off the stove and pour this in to the chutney.
  • Serve with idly dosa or even with rice or chapathi.

Paalaada



Paalaada is nothing but rice crepes which is very soft and thin.This is one dish my mom used to make whenever we had guests or on birthdays or on special occassions like Eid.It is very simple to make and we don't have to wait till the batter gets fermented like we do for dosa or appam.We have to grind the soaked rice ,coconut and egg and use it then itself.


From my mom my sister took this recipe and mixed it with her mother in law's recipe .My sister is an amazing lady who seems to have ten hands when she is in the kitchen.She always amazes her guests with delicious food. She assured me that paalaada is very easy to make.So before i came to Hyderabad soon after i got married ,i noted down this paalaada recipe in my small recipe dairy along with few other recipes from my mom and mother in law.So now when i decided to participate in this cookbook challenge of srivalli i chose this softy beauties .

I feel extremely happy and excited to be part of this cookbook challenge.Thanks a ton srivalli for the opportunity


Recipe for paalaada

ingredients


  1. idly rice - 1 cup
  2. coconut - 1/2 cup
  3. egg - 1
  4. water as required for grinding


 How i made


  • soak the rice for 2 hours



  • grind the rice along with coconut little by little adding enough water



  • pour the batter onto a strainer and strain the mixture into a vessel.



  • while grinding the last batch of rice add the egg and grind



  • strain the mixture . add salt and mix well.add water if necessary.the batter should be very thin




  • now heat a nonstick pan and pour one ladle full batter and swirl and spread the batter



  • cook covered for about less than one minute in medium flame .



  • transfer to a plate and fold it into triangle or lengthwise shape


             
  •  serve it hot with chicken /mutton curry or any kurma of your choice
