LOVELETTER(kerala pancake)


Never gave a thought about how this delicious snack got its name as loveletter when i was a kid.But now i know why it is called so.Irresistible sweetness and love  filled inside which makes you fall in love with it;indeed a loveletter..It has other names like madakku saan,elanchi etc in different parts of kerala. But i feel loveletter is the best suitable one🥰🥰🥰🥰🥰🥰🥰🥰


This was an usual after school snacks during childhood. The moment i stepped into my home coming back from school my mom while making loveletters,the aroma of cardomom and coconut rush into my nose...aahhhh..nostslgic.My mom used to add egg and used only maida to make these loveletters,which would make it even more delicious



Adding egg is optional.But it adds taste.you either use whole wheat flour alone or all purpose flour or mix of both as i did here.Either ways its a yummy snack.

INGREDIENTS

Whole wheat flour - 1/2cup
All purpose flour - 1/2 cup
Salt - 1/4 tsp
Baking soda - a pinch
Water - 1 cup
Egg -1 optional
Ghee - as required

FOR THE FILLING

grated coconut - 1/2 cup
Jaggery  - 1/2 cup
Cardamom  - 3 pods ,crushed

HOW TO MAKE

In a bowl add flour ,salt ,baking soda ,water and mix well.the batter should be loose

Grate jaggery and mix with grated coconut and crushed cardamom  and keep aside

Heat a pan..apply some ghee
Pour a big ladle of batter into the pan and spread thinly
Flip it once its cooked
Again flip it when the other side is cooked
Now take a spoon full of coconut Jaggery mixture and place in the middle of the pancake
Fold both sides of the pancake to the inside and cover the filling..
Loveletter is ready .
move to a serving plate

UNNAKKAAYA/Coconut filled banana fritters

A very very belated Eid wishes to all....I have been off from blogging for a while due to some personal reasons..But a lot  have been happening in my life:)...Thaanks a ton to all those who have asked me about my absence from blogging..glad to know that you were all missing my updates :)..thanks for the support and love

                                                     

This ramzan and Eid,unlike the past five years, i celebrated in kerala with my family in kerala.Along with my sister in law i planned to try few of  those typical malabar dishes this ramzan.My sister in law was very enthusiastic to have me alongside to experiment with new dishes.She always gives feedback about my recipes and is a great supporter of my blog.Though she is from trivandrum she knows a lot of  typical malabar recipes.So the first recipe we tried was unnakkaya.

                                              Unnakkaya is a widely popular malabar snack.Those who are from malabar side wouldn't need an introduction to this delicacy. Its a sweet dish made using ripe plantain/ethakkaya with a sweet filling inside.

RECIPE
what you need 
ripe plantain/nenthrapazam/ethakkaya - 4

for the filling
coconut - 1/2 cup
cashewnut-3 tbsp
raisins- 3 tbsp
sugar - 3 tbsp
cardomom seeds -2 or 3 pods

How to make 

  • cook the bananas in a pressure cooker or steam it in steamer until soft.
  • remove the skin and and using a knife remove the black seeds and fiber in the middle.
  • mash it and make a soft dough out of it like the chappathi dough and keep aside.
  • now we will make the filling.heat ghe.e in a pan and add cashewnuts, raisins ,coconut and cardamom seeds.saute for few minutes.remove from fire and keep aside.



  • grease your hands with ghee.take lemon sized ball from banana dough and flatten it in your palm
  • take 1 or 2 tsp full of coconut filling and place it in the center.now close the edges and make an elongated cylindrical shape using your both hands.


  • .make rest of the unnakkayas like this



  • heat oil/ ghee and slide each unnakkayas carefully and fry them turning each sides till all the sides are done


  • drain them into tissue paper and serve.


tips
  • do not overcook the bananas.
  • if the banana dough is a bit lose you can add rice flour or keep it refrigerator for a while
  • you can customize the coconut filling by adding dates ,tutti frutti, egg etc

Cornflakes Mixture

Cornflakes mixture..no one can eatjustone!!..The whole batch i make will vanish by next day.We cannot stop munching this snack.Warning..This is no guilt free snack.no problem,we have the baked version too:).Will post the baked version soon.During my visit to my husband's friend's house his wife gave me cornflakes mixture and said she made them.I cudn't believe since it tasted just like the haldiram's sweet n slat cornflakes mixture.so i asked her how she made it and decided to give a try.It was a sure hit.My daughter likes this mixture very much.Surely a kids pleaser recipe.At the same time we grown ups have a tough time resisting this tasty (guilty)snack;)..


This is a very easy snack.u can make it in a jiffy:)


 Ingredients

raw cornflakes -1 cup
poha-1cup
peanuts-1/2 cup
pottukadala-1/2 cup
cashewnuts -1/4 cup
raisins/kismis -1/4 cup
curry leaf - 1 spring
garlic -2pods(optional)
sugar-1tsp
salt-1/2 tsp
chillipowder-1/4tsp
cumin powder-1/2tsp
chat masala-1/2tsp
oil for frying

Method

mix  well sugar salt masala powders and keep aside 
heat oil in a kadai
add cornflakes and fry till crispy                                        
then add the rest of the ingredients one by one and fry
transfer everything to a tissue paper after frying.
finally fry curry leaves and garlic pods(slightly crushed)
in a large bowl add the masala we have kept aside and the fried ingredients together.mix thoroughly
transfer to an airtight container 
enjoy your snack whenever you want:)
